i am new here so looking for anyway I can find to lower my sodium, not on dialysis but ckd. I tried this meatloaf for my Sunday dinner and it was really good. Don't like not haveing some salt but it was good. I loved the sauce that was on top of it which is similar to the microwave meatloaf I fixed all the time. So today I took about 1/2 lb of ground round, browned it and made the sauce that was on top of the meat loaf to make juicy burger sandwich for lunch. I added some garlic powder and some chili powder and you could add some diced onion and green pepper to it. I plan on having that for lunch on a white bun. So how do I figure the sodium content. didn't add salt to the burger. But I took a little bite and it is pretty darn good for juicy burger and just enough tang I didn't miss the salt. Please advise. I think this sauce could be used to make ground beef sloppy joes really well. Dietitian comment: You can use DaVita Diet Helper My Creations feature to enter as a new recipe. Sounds great. What if I use ground turkey instead of beef? Dietitian comment: I actually prefer ground turkey instead of beef in meatloaf. This recipe should work great with that substitution. I use the lean ground turkey with 8 grams of fat per serving. The extra lean or ground turkey breast is too dry for my taste.

This was a good recipe. I had to omit the egg because of allergies and used rice milk for the same reason. I only used half the crackers. It turned out great. My whole family enjoyed it.

My hubby and I both really enjoyed the meatloaf. I did add 3 Tbs of chopped green pepper. I think I will try meatballs next time and double the recipe and freeze half!

To make topping sauce added some grape or strawberry jelly cut the brown sugar some or it'll be too sweet

My husband and I loved this recipe. I followed the recipe, except I subsituted 2 slices of white bread, cut into small cubes, in place of the crackers. And I used low sodium/low sugar catsup. Did not come out dry. I'm going to make this on a weekly basis. I served it with Almost Mashed Potatoes, a recipe also on DaVita.

I make this a lot. My husband and I love it, but I was wondering if I could sub potatoes for the ketchup topping? Dietitian comment: If potassium is not a concern you can substitute potatoes.

This is fantastic! I made medium size balls and placed them in a sprayed cupcake pan. 350 degrees for20 min., add topping and cook an additional 8 minutes.

Delicious. I was worried about how simple it was but it smelled and tasted great. I would make the glaze a little less sweet next time but that is just my personal taste. So good I'm making a double batch next time I make it! Can't wait to try it on a sandwich for lunch. Thank you for the recipe.

I made some modifications to this recipe and it was not dry at all. Try doubling the milk to 4 tablespoons and also sautéing onion, along with garlic, before combining with the other ingredients. For the glaze I used 1/4 cup ketchup, 2 tablespoons brown sugar and 2 tablespoons apple cider vinegar.

It was my second recipe from DaVita, and I was really impressed by the flavor. It tasted a lot like my original meatloaf recipe (pre-kidney disease). My family did express it was slightly dry. What could I do different to make it a little more moist? I did use 7% fat lean ground beef. I don't know if I should use a higher fat content? Or perhaps cover the loaf when you bake it for the first 40 minutes to keep in the juices? Dietitian comment: You can use a higher fat content beef or you could use the 7% fat beef and add additional oil to the meatloaf.

This sounds good. I am on low sodium diet, but my husband is on gluten-free diet. What can I use in place of crackers that does not include wheat? Dietitian comment: You could use rice crackers or simply omit the crackers. It will still turn out delicious.

We are just starting Hemo dialysis and are on low phosphorus and potassium diet, and tomato and catsup is on our list to avoid. So I am hesitant to use it as the sauce or in the loaf itself. Do you think the amount that will be per serving will be okay? Dietitian comment: Check with your dietitian as they are aware of your potassium and phosphorus values. The list should be renamed the "Limit" list as many of those foods can be included in small amounts as long as your lab values are in normal range.

We have made this meatloaf several times and really enjoy it. I just put enough of the topping on the meatloaf to cover it leaving about 1/2 of the sauce left over. I'm still trying to find a good meatball recipe and wondering if the meat mixture of this recipe might make good meatballs - might try that next time.

Dietitian comment: Yes this change will decrease sodium and potassium but not if you use undiluted condensed tomato soup[INVALID]it is 180 mg higher in potassium for 1/3 cup.

My husband loved this. We did agree however, that the next time I make it, I am going to add 1-2 tablespoons of the sauce, right into the meat itself, then spread the rest on top of the meat as instructed in the directions. Also, I used Ground Round. We did not buy it at the grocery store, we went to the butcher shop and bought it. Found out it has a maximum of 5% fat. This made an incredible meatloaf. It was not dry. It was not greasy. It was awesome. I suggest Ground Round for this meal. I also didn't have saltines, so I used Back To Nature Classic Round Crackers. They are 100% natural and really good. This is definitely a keeper.

The Meatloaf was very good and we loved the sauce for the top! I added some extra seasonings and diced a garlic to put in it. I am new to this with and I amin late stage 3 and so I thought I would try a few things and learn as much as I could before my dr appt in 2 weeks. We did this on the grill and it was delicious and my hubby loved it also and said he would like to have it again. Thank you for the wonderful recipes and this site has so much info!

I made this meatloaf as a "loaf" and didn't care for it that much, but I used my cupcake holder and it was delicious. Only two at a time, have to watch my husbands potassium and phosphorus, you know. I am going to try it in my crock-pot just to see have it tastes.

I noticed that this calls for brown sugar. On our food list brown sugar is on the avoid list. Why? Moderator Comment: Brown sugar contains molasses, a source of potassium. 1/2 cup of packed brown sugar sontains 146 mg potassium whereas white sugar has only 2 mg. You can still use brown sugar. The most important thing is the potassium content of the final product.

Love this meat loaf. We make this once a week. We use ground turkey instead of ground beef and use Egg beaters for the 'egg' portion. Very tasty, expecially with the sauch topping.

I am so happy to see a recipe that I can use catsup, as I received a renal diet which said to not use tomatoes and tomato sauce, and i assumed this also met catsup. Does this mean that I can also use a little on a burger?

We have a 13 year old with a failing kidney. It is a struggle to find recipes the whole family enjoys. Unfortunately, our 13 yr old did not care for this, but three other family members (including me!) liked this meatloaf a lot. So I would recommend giving this one a try. We used no salt added catsup.

Awesome recipe! One change could be a bit more brown sugar for the topping. I think using a little less than 1/4 cup makes the sauce amazing. I also baked this in mini loaves. 1/4 of the meat per loaf.
