I see NO reason to add even 2 tsp packed brown sugar and 1 cup white rice to ANY recipe for a person with kidney problems usually as the result of uncontrolled diabetes. Other than that, this recipe started out as a good choice. I would also use Tamari rather than wheat-based soy sauce.

What is the sodium intake per day for kidney stones? Dietitian comment: It depends on your individual diagnosis. Usually for high risk kidney disease a diet below 2000 mg sodium is recommended. Check with your doctor or dietitian for your individual target.
