Sounds good and quick. I will try it when I have a little energy. I think I will try putting some brown sugar and cheese in it also. I like cobbler's idea.

I do simmular with full recipee of meatloaf and use a large cup cake tin to make a dozen at a time then freeze and have meals quickly for lunch turn out on sheet pan to freeze then put in gallon zip lock after frozen individual.. its good for a meat ball sandwich each slice in half on hoagie roll

I wish I would have seen this recipe last night. I made my traditional meatloaf in a loaf pan and it was so good. I could have used this recipe for cooking it and had a single serving for dinner.
