Can brown rice substituted for the white rice and add mushrooms (?) and onion with maybe cilantro (?) to add more of a burst of flavor? Cilantro adds wonderful flavor to any salsa. And what about a thin slice of mozzarella cheese on top instead of the bread crumb mixture? Would all this still be considered 'kidney-friendly' or am I hoping for too much? :D (fyi I just really hate bland food. :P ) It is tolerable but could use some improving if possible. Dietitian comment: You can sub the brown rice and add 1/4 cup mushrooms and cilantro without changing the nutrients too much. Adding the cheese will boost the sodium and phosphorus. You can use the My creations feature in Diet Helper to do an analysis with your changes then compare the nutrients of concern.

I made the recipe - I also thought it was bland. I had extra rice stuffing, I added ginger and pineapple to spruced it up. Glad I did.
