I was reading through comments people were complaining about carbs/auger ect. People with diabetes need to remember were all not diabetic I have esrd due to auto immune. These sounds very good! I love angel food cake as is! Never heard of using pop before.

Dietitian comment: I rechecked the carb analysis and it is correct if you make 72 cookies, 2 cookie per serving (10 grams carbs from the cake mix and 4 grams from the coconut flakes). However I can certainly understand if you'd rather get your carbs from other sources like fresh fruit.

Hubby and I are both Diabetic. Tried this recipe as written, but these were too sweet flavored. So I used unsweetened coconut, vice sweetened, and black cherry zero soda instead. The results were tasty, not as sweet. (And my Kidney disease, Stage 4, requires that I use clear, not tinted, soda, like the zero black cherry.) Also, noticed the coconut was toasty and crisp on the edges, which we also liked.

How is this safe for kidney disease? Diet soda is the worst thing you could possibly ingest at this point. Dietitian comment: Most restrictions on cola or soda for the kidney diet is on those products with phosphate additives. You could replace diet with regular soda. Always read ingredients to avoid phosphate additives.

I tried this recipe and while I liked the flavor and texture of these, they played havoc with m blood sugar. I had one and watched my blood sugar go from 117 to 154. I also take issue with the carbo count of 14 per 2. My math says 23 for 2. I tossed the remainder out.

Was hoping for a moderator comment but never got one. Made with 100% apple juice-threw them right in the trash. Moderator comment: The recipe calls for carbonated beverage. The carbonation may be required. This is my guess as to why the recipe did not work. Has anyone else tried it with the soda?

ANGEL COOKIES Does not indicate size of spoonful. Nutrients does not list grams of sugar per serving. Moderator comment: The total sugar is 4 grams per serving. An exact spoon measure was not provided, but I suggest using a teaspoon from your flatware set or you can use a measured teaspoon.
