I made this for Thanksgiving last year and ended up having to make it for Christmas too because everyone was so excited about it. I am an inexperienced cook/ baker and I was not confident that anything I touched would be well-received. I was wrong. This recipe is fantastic and I will be making it again for the holidays because it puts a big smile on many people's faces.

Want to try this but don't know what liquid egg substitute is???? Dietitian comment: It is a refrigerated or frozen product made from egg whites, often used by people on a low cholesterol diet. You can substitute 2 eggs or 1 egg and 1 egg white for the 1/2 cup liquid egg substitute.

It came out PERFECT! I went ahead and added a dash more of the pumpkin pie spice, and it tastes even better! What an easy and quick recipe! This is a definite MUST try dessert...especially for the holidays! Thanks DaVita!

I made this today and served it for desert. Family couldn't believe it was one of my "Kidney" recipes. They loved it and said I should make it for Thanks- giving. To save on calories I omitted the crust completely. Just mixed the ingredients and poured into a pie plate and baked. Used Splenda for sugar...1/2 white & 1/2 brown. Sprinkled the top with a little more pumpkin pie spice. This is really good, believe me.
