Helpful hints

  • Use turkey or chicken leftover from a holiday meal.
  • Make a meatless salad by replacing chicken or turkey with either diced extra firm tofu and coarsely diced mushrooms or diced cooked egg white and coarsely diced mushrooms.
  • In the egg white variation, use the whites of hardboiled eggs or cooked pasteurized liquid egg whites.
  • Nuts are high in phosphorus and potassium. By limiting portion to 1/2 cup the walnuts add 32 mg phosphorus and 50 mg potassium per serving. Omit if desired.
  • Use low-fat sour cream and mayonnaise to cut fat grams in half.

This is a wonderful recipe for both dialysis patients and those of us with healthy kidneys. Flavor is highly personal and subjective. I add 1/4 tsp. poultry seasoning and a little black pepper to the turkey when I cook it and this adds more flavor. Even though I no longer work for DaVita, I'll be sharing this recipe with my patients!

This is really a good recipe. I've made this for patients in the past and the majority really enjoyed it. Can use reduced-fat mayo & sour cream to decrease calories & fat if desired.

I made after having it at my DaVita Center....Jeff made it for everyone. It was fantastic....but when I made it, it was good, but not as good as Jeff's.
